Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsweetened applesauce
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apple

Instructions 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, combine oats and milk. Let sit for 10 minutes.
  3. In another bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Stir applesauce, oil, egg, and vanilla into the oat mixture.
  5. Add wet ingredients to dry ingredients and mix until just combined. Fold in diced apple.
  6. Divide batter evenly among muffin cups.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack.
