Ingredients

  • 8 large eggs
  • 1 cup asparagus, chopped trimmed and cut into 1-inch pieces
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, Parmesan cheese, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the garlic and asparagus, and sauté for about 5 minutes until the asparagus is tender.
  4. Pour the egg mixture into the skillet over the asparagus. Cook for 2-3 minutes until the edges start to set.
  5. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set and golden on top.
  6. Remove from the oven and let it cool for a few minutes before slicing and serving.
