- 2 slices Bread Whole grain or your choice
- 1 Avocado Ripe
- 2 Eggs Large
- 1 tablespoon Olive Oil
- to taste Salt
- to taste Pepper
1. Toast the bread slices until golden brown.
2. While the bread is toasting, heat olive oil in a frying pan over medium heat.
3. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
4. Meanwhile, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth.
5. Spread the mashed avocado evenly onto the toasted bread slices.
6. Top each slice with a cooked egg. Season with salt and pepper to taste.
