Ingredients 

Main Ingredients

  • 2 large flour tortillas
  • 4 large eggs beaten
  • ½ cup shredded cheese
  • ¼ cup diced bell pepper
  • ¼ cup diced onion
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. 1. Heat butter in a skillet over medium heat.
  2. 2. Add diced bell pepper and onion, cook until softened.
  3. 3. Pour in beaten eggs, season with salt and pepper, and scramble until cooked.
  4. 4. Place one tortilla in the skillet, sprinkle half of the cheese over it.
  5. 5. Add scrambled eggs and veggies on top of the cheese.
  6. 6. Sprinkle the remaining cheese over the eggs and top with the second tortilla.
  7. 7. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  8. 8. Remove from skillet, cut into wedges, and serve.
