  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoon lime juice
  • to taste salt

Instructions 

  1. In a mixing bowl, combine corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add lime juice and salt to taste. Mix well.
  3. Serve immediately or refrigerate for later.
