Ingredients 

Main Ingredients

  • 1 lb Breakfast sausage
  • 1 cup Chopped onions
  • 1 cup Chopped bell peppers
  • 2 cups Shredded hash browns
  • 12 Eggs
  • 2 cups Shredded cheddar cheese
  • to taste Salt and pepper

Instructions 

  1. 1. Preheat your Dutch oven over medium heat.
  2. 2. Cook the breakfast sausage until browned. Remove and set aside.
  3. 3. In the same Dutch oven, sauté the onions and bell peppers until softened.
  4. 4. Add the shredded hash browns and cook until they start to brown.
  5. 5. Return the sausage to the Dutch oven and mix everything together.
  6. 6. In a bowl, whisk the eggs and pour over the mixture in the Dutch oven.
  7. 7. Cover with the lid and cook until the eggs are set, about 20-25 minutes.
  8. 8. Sprinkle the shredded cheddar cheese on top, cover, and cook until melted.
  9. 9. Season with salt and pepper to taste. Serve hot.
