Ingredients 

Main Ingredients

  • 2 large Eggplants
  • 3 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cloves Garlic minced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants into ½ inch thick rounds.
  3. Place the eggplant slices on a baking sheet.
  4. Brush both sides with olive oil and sprinkle with salt and pepper.
  5. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  6. Remove from the oven and sprinkle with minced garlic.
