Ingredients 

Main Ingredients

  • 1 cup Bell peppers, diced
  • 1 cup Zucchini, diced
  • 1 cup Corn kernels
  • 1 cup Black beans, cooked
  • 1 cup Shredded cheese
  • 4 large Flour tortillas
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. 2. Add bell peppers, zucchini, and corn. Cook until tender, about 5 minutes.
  3. 3. Add black beans and cook for another 2 minutes. Remove from skillet and set aside.
  4. 4. Wipe the skillet clean and heat the remaining 1 tablespoon of olive oil over medium heat.
  5. 5. Place one tortilla in the skillet, sprinkle with cheese, and add a portion of the vegetable mixture. Top with another tortilla.
  6. 6. Cook until the bottom tortilla is golden brown, about 2-3 minutes. Flip and cook the other side until golden and the cheese is melted.
  7. 7. Repeat with remaining tortillas and filling. Cut into wedges and serve warm.
