- 4 cups sliced cooked beets

- ¼ cup water
- 2 tablespoons butter
1. In a saucepan, combine sugar and cornstarch. Add vinegar and water, then whisk until smooth.
2. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
3. Add the beets and butter. Cook until heated through, stirring occasionally.
