Ingredients 

Macaron Shells

  • 100 g Almond flour
  • 100 g Powdered sugar
  • 100 g Egg whites room temperature
  • 100 g Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Filling

  • 200 g Butter softened
  • 200 g Powdered sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together.
  3. Beat egg whites until foamy, then gradually add granulated sugar and beat until stiff peaks form.
  4. Fold in almond flour mixture and vanilla extract gently.
  5. Transfer batter to a piping bag and pipe small circles onto prepared baking sheets.
  6. Tap baking sheets on the counter to release air bubbles. Let sit for 30 minutes to form a skin.
  7. Bake for 15 minutes. Let cool completely before removing from parchment paper.
  8. For the filling, beat butter until creamy. Gradually add powdered sugar and vanilla extract, and beat until smooth.
  9. Sandwich macarons with filling. Store in an airtight container.
