Ingredients 

Main Ingredients

  • 3 pounds Chuck Roast
  • 2 tablespoons Olive Oil
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 sprigs Rosemary
  • 2 sprigs Thyme
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 275°F (135°C).
  2. Heat the olive oil in a Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, add the sliced onion and cook until softened. Add the minced garlic and cook for another minute.
  4. Return the roast to the pot. Add the beef broth, carrots, potatoes, rosemary, and thyme. Season with salt and pepper.
  5. Cover the pot and transfer to the preheated oven. Cook for about 4 hours, or until the meat is tender.
  6. Remove the pot from the oven and let it rest for a few minutes before serving.
