  • 0.5 cup feta cheese crumbled

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss beets with olive oil, salt, and pepper.
  3. Spread beets on a baking sheet lined with aluminum foil.
  4. Roast in the oven for 45 minutes, or until tender.
  5. Remove from oven and let cool slightly.
  6. Sprinkle with crumbled feta cheese before serving.
