Main Ingredients
- 4 medium beets peeled and cut into wedges
- 2 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup feta cheese crumbled
Preheat oven to 400°F (200°C).
Toss beets with olive oil, salt, and pepper.
Spread beets on a baking sheet lined with aluminum foil.
Roast in the oven for 45 minutes, or until tender.
Remove from oven and let cool slightly.
Sprinkle with crumbled feta cheese before serving.
