Ingredients 

For the shrimp

  • 1 lb shrimp, peeled and deveined
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup flour
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 1 cup vegetable oil, for frying

For the sandwich

  • 4 French rolls, split and toasted
  • 1 cup lettuce, shredded
  • 2 tomatoes, sliced
  • ½ cup remoulade sauce

Instructions 

  1. 1. In a bowl, combine buttermilk and shrimp. Let it soak for 10 minutes.
  2. 2. In another bowl, mix cornmeal, flour, Cajun seasoning, and salt.
  3. 3. Heat oil in a frying pan over medium heat.
  4. 4. Dredge shrimp in the cornmeal mixture, then fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
  5. 5. Assemble the sandwiches: Spread remoulade sauce on the rolls, add lettuce, tomato, and fried shrimp. Serve immediately.
