Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Mushrooms, sliced
  • 2 cups Spinach, fresh
  • 4 pieces Flour tortillas
  • 1 cup Cheddar cheese, shredded
  • 1 pinch Salt
  • 1 pinch Black pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms and cook until tender, about 5 minutes.
  3. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper.
  4. Remove the mixture from the skillet and set aside.
  5. Place a tortilla in the skillet, sprinkle half with cheese, add the spinach and mushroom mixture, and top with more cheese. Fold the tortilla over.
  6. Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.
