Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Coconut Milk
  • ½ cup Peanut Butter creamy
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Vegetable Oil
  • ¼ cup Chopped Peanuts for garnish
  • 2 tablespoon Cilantro chopped, for garnish

Instructions 

  1. Heat the oil in a skillet over medium heat. Add the chicken and cook until browned.
  2. In a mixing bowl, combine coconut milk, peanut butter, soy sauce, lime juice, garlic, ginger, and brown sugar. Mix well.
  3. Pour the sauce over the chicken in the skillet. Simmer for 10-15 minutes until the chicken is cooked through and the sauce thickens.
  4. Garnish with chopped peanuts and cilantro before serving.
