Ingredients 

Brine Ingredients

  • 1 gallon water
  • 1 cup kosher salt
  • ½ cup brown sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 tablespoon crushed red pepper flakes
  • 4 bay leaves
  • 1 large orange, quartered
  • 1 large onion, quartered
  • 4 cloves garlic, smashed

Instructions 

  1. Combine all ingredients in a large pot. Bring to a boil, stirring to dissolve the salt and sugar.
  2. Remove from heat and let cool to room temperature.
  3. Submerge the turkey in the brine. Refrigerate for 24 hours.
  4. Remove turkey from brine, rinse, and pat dry before cooking.
