  • 2 medium zucchinis sliced thin
  • 2 tablespoon olive oil
  • ½ cup bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the zucchini slices with olive oil until well coated.
  3. In another bowl, mix together the bread crumbs, Parmesan cheese, garlic powder, salt, and black pepper.
  4. Dip each zucchini slice into the bread crumb mixture, pressing lightly to coat both sides.
  5. Place the coated zucchini slices on the prepared baking sheet in a single layer.
  6. Bake for 25-30 minutes, or until the chips are golden brown and crispy. Serve immediately.
