Ingredients 

Main Ingredients

  • 2 cups Cooked rice
  • 1 lb Shrimp, peeled and deveined
  • 2 tablespoon Soy sauce
  • 2 tablespoon Vegetable oil
  • 1 cup Frozen peas and carrots
  • 3 Green onions, chopped
  • 2 Eggs, beaten
  • 2 cloves Garlic, minced

Instructions 

  1. 1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
  2. 2. Add remaining oil to the wok. Add garlic and cook for 30 seconds.
  3. 3. Add peas and carrots, cook for 2 minutes.
  4. 4. Push veggies to the side, pour in beaten eggs and scramble until fully cooked.
  5. 5. Add rice, soy sauce, and shrimp back into the wok. Stir-fry for 2-3 minutes.
  6. 6. Garnish with green onions and serve hot.
